Tajik Sauce

Tajik Sauce Recipe
Meat- chicken or beef or lamb stew meat
1 onion chopped
1 green pepper chopped
3 carrots chopped
5-6 large potatoes cubed
1-2 tomatoes diced
3-4 bay leaves
2 tbsp dill
2 tbsp cumin seed or powder
3 large cloves of garlic

In a large stew pot  fry the meat in about 3-4 tbsp of oil salt and pepper the meat. You can also spice the meat with the cumin powder and a little garlic powder. When the meat is browned add the onions. Fry the onions until they have caramelized. Next add the green pepper and carrots, when the green pepper and  carrots have softened. Add the tomatoes and potatoes fry them a little till they are soft on the outside. Add water with bouillon or 1/2 water and half chicken stock or beef stock. until you barely cover everything in the pot. Add bay leaves, cumin, grated garlic cloves. Cover and let it cook for about 45mins to 1hr until everything is soft and its not soupy anymore. It should be saucy. (thats why it's called sauce)  towards the end add the dill. I like it salty so salt to your liking. Tajiks eat on a very deep plate with sour cream or plain yogurt. Chop some fresh cilantro and green onion and sprinkle on top. We also eat it with fresh baked bread, for dipping.
